Then it is an issue with the remote server presenting you application in 100% resolution. The Surfaces have a very high resolution. On your desktop settings you can see you desktop magnification level. Right click your desktop to find these settings.
Now you have to find the equivalent settings on your desktop on your remote server. Probably best to try accessing your remote desktop directly and try the same exercise as on your local desktop.
My theory us that then this should bleed through when you launch the remote app. If this does not work, please contact your IT admin.
